Instead of using the bread for fondue which sounds like a horrible idea given it's bowling ball qualities: Why don't you make BREAD PUDDING?? I made some this weekend, and it was too sweet. Me thinks the beer addition would add some nice savory tonalities to the overall mouth feel, or whatever.
